Easy to make and so delicious, this pseudo quiche is great for a fun "breakfast for dinner" or as an addition to potluck brunches.

Ingredients:
18 eggs
1/4-1/2 cup of Milk
10 ounces hot Salsa
1 package frozen Potato rounds or tater tots, thawed
Grated Cheddar cheese to taste

Preparation:
In large bowl combine eggs and milk. Whisk until all yolks are broken and well blended.
Add salsa to eggs and whisk.

In your largest glass baking dish, (larger than 9x13, if you have it) empty potatoes and line pan.

Pour egg mixture over potatoes and bake at 350' for 35 minutes.

Cover entire dish with cheese and return to oven until cheese is melted and bubbly, about 10 minutes.

Cook's Notes:
Even if you're sensitive to spicy foods, go ahead and use the hot salsa anyway as the eggs and cheese really mellow it to a small kick, not a mouth burning wow!
